Replying to @𝐒𝐚𝐝𝐢𝐞 It’s always a good time for Julieta’s arepas con queso! 🫓 INGREDIENTS: -4 cups warm water -2 1/2 tbsp unsalted butter -2 tsp salt -4 cups P.A.N precooked corn flour -1 1/4 cups queso cotija -1 1/2 cups mozzarella -1 cup monterey jack -extra butter or cooking spray, for cooking -flaky salt, for Julieta’s special topping INSTRUCTIONS: 1. In a mixing bowl or large measuring cup, add warm water, butter and salt. Whisk until combined and butter has melted. 2. In a separate large mixing bowl, add P.A.N corn flour, cotija cheese and monterey jack cheese. 3. Slowly pour the water and butter mixture into the dry mixture, using your hands to fully combine. Knead the dough until it becomes manageable. 4. Once dough has come together, place a towel over the bowl to let the dough hydrate for about 5 minutes. 5. Divide the dough into equal sections, depending on how large you’d like your arepas, and flatten them out between your hands. 6. Create a well in the middle of the flattened dough ball and place a large pinch of mozzarella cheese into the well. 7. Using your hands, close the dough and roll into a ball, making sure that no mozzarella cheese is sticking out. Gently flatten out the dough ball between your hands again to make a thick disc shape. 8. Heat skillet or griddle over medium heat with extra butter or cooking spray. Place arepas onto the skillet/griddle and cook for about 5 minutes on each side or until they develop a golden brown crust. 9. Once cooked, immediately sprinkle Julieta’s special ingredient on top and let cool slightly. 10. ENJOY! 🫓🦋
