Cinnamon Cereal Protein Bars 🥣 Ingredients: * 2 1/2 cups cinnamon-flavored cereal, crushed slightly * 1 cup almond butter (or cashew butter) * ¼ cup raw honey or maple syrup * 1 scoop vanilla or cinnamon protein powder (or collagen) * 1 teaspoon cinnamon * ½ teaspoon vanilla extract * ¼ teaspoon sea salt * 2 tablespoons coconut oil, melted * Optional: ¼ cup chopped pecans or walnuts * Optional: ¼ cup mini dark chocolate chips or a drizzle of melted chocolate Instructions: 1. In a large bowl, mix the nut butter, honey, protein powder, cinnamon, vanilla, sea salt, and melted coconut oil until smooth. 2. Gently fold in the crushed cinnamon cereal and any optional mix-ins like nuts or chocolate chips. 3. Line an 8x8-inch pan with parchment paper and press the mixture evenly into the pan. 4. Place in the fridge for at least 1 hour, or until firm. 5. Once set, lift the parchment paper out, cut into bars, and enjoy! Store in the fridge for up to a week or freeze for longer storage.
