Recipe here👇 Recently I shared a money saving recipe for a vegan ricotta, and I’m pretty sure that most people just use ricotta in lasagna and maybe a baked ziti or stuffed shells or things like that but it’s so much more versatile than that so over the next few days, I’m going to share a couple of different recipes and ways to use it other than with just pasta 🌱Ricotta and Tomato Toast🌱 1 slice of sourdough bread 1 clove garlic , split in half 2 tablespoons vegan ricotta (recipe below) 1 plum tomato, sliced Fresh oregano Olive oil Flaky salt Crushed red pepper flakes Toast the bread Run the garlic over one side of the bread Spread the ricotta over the bread Add the tomatoes Top with fresh oregano, a drizzle of oil, a sprinkle of salt and some red flakes 🌱Vegan Cashew Ricotta 🌱 Ingredients: 1 .5 cups raw cashews soaked overnight or at least 6 hours Juice of 1 lemon 1/2 teaspoon salt 1/4 cup - 1/2 cup water Add the raw cashews to a bowl, cover them and soak them overnight. Drain and rinse them. Add the cashews, lemon juice, salt, a 1/4 cup water, and salt to a food processor and process until smooth. Scrape down the sides as you go and add additional water a spoon at a time until you get the desired consistency . Enjoy
