#ad Get ready for the most show-stopping dessert that is as easy as pie… key lime pie that is. These lime possets are my go-to when entertaining. Plus they’re made with Greek yogurt, which adds protein, can support gut health and is the key to their creamy dreaminess. All you need to make them is… Lime Posset: 2 cups heavy cream ⅔ cups sugar 5 tablespoons freshly squeezed lime juice ½ cup Greek yogurt ½ tsp salt Optional Garnish: Crushed graham crackers Lime Zest STEPS: 1. In a medium saucepan over high heat, whisk together heavy cream and sugar. Bring to a rolling simmer and whisk in the lime juice. Continue to cook for 5 minutes, or until thickened and coating the back of a spoon. 2. Remove from the heat, cool for 10 minutes, whisk in the Greek yogurt and salt and cool for another 5 minutes. 3. Pour into hallowed out limes or glasses and chill until set, about 15-20 minutes more. Garnish with optional crushed graham crackers, lime zest, and fresh mint leaves and enjoy! *note: to hallow out limes from shells by cutting the limes in half lengthwise. Use a paring knife and cut the lime flesh around the perimeter of the limes. Use a spoon to scoop out the flesh and pat dry with a clean towel.
