FROM A CLINICAL NUTRITION GRADUATE💗 HORCHATA ✨HNY! So grateful to have a fresh start. I’m wishing you so much health and happiness this year. Was craving horchata, so I made some to celebrate the NY! This is my version of a cocktail, and I hope you try it! It’s kid-friendly too! So nostalgic because growing up, this was my fave! ❤️ 4 cups of filtered water, divided 1 cup raw unsalted cashews 1 tsp ground Ceylon cinnamon 1 tsp pure vanilla extract Pinch of sea salt Maple syrup, up to ½ c OR pitted Medjool dates Garnish: ground Ceylon cinnamon when serving In a high-speed blender, blend cashews, 2 c water, and cinnamon until creamy and smooth (I blended x 2.5 minutes or more) Pour the blend into a large bowl or pitcher (Straining may be necessary - depending on blender), and add sea salt, maple, vanilla, and 2 additional c water. Mix well, and adjust sweetness if necessary. Serve over crushed ice, and garmish with a sprinkle of cinnamon. Enjoy!💗✨
