Ingredients • 3 chicken breasts • Salt & pepper to taste • 1 bottle Buffalo Wild Wings Southwest Ranch sauce • 16 oz Heavy whipping cream (use the empty sauce bottle to measure) • 1 block cream cheese • A handful each of shredded cheddar and shredded Parmesan • Pasta of your choice (cooked separately) Instructions 1. Place chicken breasts in your crockpot and season with salt & pepper. 2. Pour an entire bottle of Southwest Ranch sauce over the chicken. 3. Refill the empty sauce bottle with heavy whipping cream, shake well, and pour it in. 4. Top with a block of cream cheese, plus a handful of shredded cheddar and Parmesan. 5. Cook on HIGH for 4 hours. 6. Shred the chicken, then stir in cooked pasta. 7. Add extra Parmesan on top if you like! That’s it! Sloppy Joe Cornbread Bake (Original Recipe from PlainChicken) 1 Box of Jiffy Cornbread mix 2 eggs 1/2 cup milk 2 cups corn (frozen, canned or cream style) 2 cups shredded cheese (divided) 1 to 1.5 lbs ground beef 1 can sloppy joe sauce Mix the cornrbread mix, eggs, milk, corn and 1 cup of cheese.   Spread the mixture into a greased 9x13 baking dish and pre-bake at 400 degrees for 20 minutes.   While it bakes, brown and drain the ground mix and add the sloppy joe sauce, let this simmer. Spoon the sloppy joe mixture over the parbaked cornbread and top with remianing cheese.   Bake for an additional 20 minutes, cut into squares, and serve!  So simple yet so delicious! "Chick-fil-a" Style Sadndwiches at home! One large chicken breast makes three sandwiches so it's affordable too.  Here's the full recipe: 1 to 2 large chicken breasts sliced into 3 sandwich sized pieces (cut off the "thin end" then cut the thick end in half lengthwise) Pickle juice (for marinade) 1 1/2 cups all purpose flour 1 teaspoon paprika 1 teaspoon garlic powder Salt & pepper to taste 1 egg 1 cup of milk Oil for frying Buns, pickles, and any toppings you like Marinate the chicken cuts in pickle juice for at least 30 minutes Combine the flour, paprika, galric powder, salt and pepper and whisk together the egg and milk.   Mix a little of the wet mixture into the dry mixture to create a more textured coating Coat the chicken in the dry mix then the wet mix and back into the dry mix.   Fry the chicken in hot oil until golden brown and cooked through.   Serve on toasted buns with your favorite toppings! These are so good and easy to make at home. Chicken Parmesan Meatballs Makes 15 meatballs Ingredients: 1 lb ground chicken (substitute any type of ground meat) 1/4 cup fresh basil + 1 Tbsp for garnish 1/4 cup Italian Nut Crumbs (substitute: panko, regular bread crumbs, crushed chips or crackers) 1/3 cup grated parmesan cheese + 1 Tbsp for garnish (I used grated parmigiano reggiano) 1 tsp Italian seasoning 2 garlic cloves minced 1/4 tsp salt 1/4 tsp ground pepper 1 large egg 8 oz jar favorite tomato sauce 15 pearl mozzarella balls 1-2 Tbsp olive oil Instructions: 1. Preheat oven to 400 F 2. Add egg to a bowl and whisk 3. Add fresh basil, nut or bread crumbs, parmesan cheese, 2 Tbsp tomato sauce, Italian seasoning, salt, pepper, minced garlic, and mix 4. Gumbo! I claim no authenticity here, just using what I had on hand but it turned out amazing! Serves 6 to 8 4 boneless skinless chicken thighs-seasoned with cajun seasoning 12 ounces smoked sausage-sliced  1/2 lb frozen peeled shrimp 2 TBSP Oil  2 bags (20 ounces total) frozen seasoning blend (onion, celery, bell pepper) 3 garlic cloves, minced 6 cups chicken stock (store bought, homemade, or bouillon works as well) For the roux: 2/3 cup of oil 1 heaping cup all purpose flour Homemade creole seasoning:  2 1/2 teaspoons paprika 2 teaspoons salt 2 teaspoons garlic powder 1 teaspoon pepper 1 teaspoon onion power 1 teaspoon cayenne 1 teaspoon thyme 1) Season chicken with cajun seasoning and sear in oil (4 min per side) remove and bronw the sausage then set that aisde too. 2) Add frozen seasoning blend to the pot, scraping up brown bits, set aside and wash the pot 3) Add oil & flour to the pot, whisking constantly over medium heat until it turns a deep brown color (takes approxiimately 30 mintutes, do not rush this step!)  4) Stir in cooked veggies and garlic, then slowly whisk in chicken stock.  Add the creole seasoning and bring to a boil 5) Add back in the chopped chicken, sausage, and shrimp, simmer for 5 minutes until shrimp is cooked and serve over hot white rice. That is loaded with nourishing ingredients you can feel good about eating. And it makes for a great prep ahead meal to have ready to go for your busy work week. Pasta e Fagioli Soup: 1 lb grass fed ground beef 1-2 Tbsp olive oil 3 carrots diced 4 celery stalks diced 5 garlic cloves minced 1 small yellow onion diced 1 tsp dried oregano 1 tsp Italian seasoning 1/2 tsp dried basil 1/2 tsp dried thyme 2 bay leaves Salt + pepper to taste 3 cups beef bone broth 1 1/2 cups marinara sauce of choice 1 can fire roasted tomatoes 15.5 oz organic dark red kidney beans  13 oz organic cannellini beans 1 1/2 cups dried Ditalini pasta Instructions: 1. Cook your pasta according to package but cook 1-2 minutes less. Once done rinse under cold water and set aside 2. To a medium pot add olive oil on medium heat 3. Add diced onions, carrots, celery, a little bit of salt + pepper, and saute for 5-7 minutes 4. Add in minced garlic and seasonings and cook a minute or so 5. Add ground beef a little more salt and pepper, break up with spoon, and cook until no longer pink 6. Add beef bone broth marinara sauce, fire roasted tomatoes, beans, mix, add two bay leaves 7. Cover and simmer for at least 30 minutes 8. When ready to enjoy add in your cooked pasta and enjoy 9. Note: the pasta will suck up a lot of the broth, so if you want to reserve the pasta on the side for leftovers I would suggest.
