Before you come at me with pitchforks, there are exceptions to the rule, like sometimes bittersweet dark chocolate *can* pair well with wine (still doesn’t change the temperature thing) and chocolate desserts definitely can, but for the most part - chocolate candy and dry wine just isn’t meant to be 🙅 Of course food and wine are subjective and if it works for you, enjoy!! 🫶 But just like the belief that all wine gets better with age, somehow this has become widely accepted without ever really questioning it. I don’t believe in soulmates, unless it’s RED WINE & TRUFFLES! These silky, melt-in-your-mouth truffles are made with dark chocolate, espresso, and a splash of red wine, and they taste like romance. YOU’LL NEED: -8 oz bittersweet or semisweet chocolate, finely chopped (use the good stuff!) -1/3 c heavy cream -1 tsp espresso powder -1 tsp unsweetened cocoa powder -3 T dry red wine (like Cab Sauv) -1 tsp pure vanilla extract For rolling: -Unsweetened cocoa powder -Chocolate sprinkles -Crushed freeze-dried berries -Melted dark chocolate Warm the cream, pour over the chocolate, and stir until smooth.
