“Cheesy Zaatar & Potato Upside down pie” ——- Episode 11: my newest episode of my “upside down pies” series are these delicious cheesy Zaatar & Potato pies, if you haven’t tried mixing cheese with Zaatar on top of potatoes then you are in for a treat! I’ve been making this combo for years now but wanted to try it with my upside down pies and they turned out exceptionally good. Give it a try and tell me what you think! All you need for 6 pieces: 6 small golden small potatoes 1 puff pastry sheet cut into 6 squares 1/2 cup grated triple cheddar cheese or any other shredded cheese 1/4 cup Butter, softened 1/2 cup Zaatar Mix Flakey salt Egg wash (whisked egg) Method: Wash the potatoes well, then using a mandolin, slice them thinly, pat dry and set aside. Preheat oven to 380F Prepare an oven sheet with parchment paper, drizzle butter in 6 locations of the sheet, leaving adequate space between them, sprinkle Zaatar mix, pinch of flakey salt then add the potato slices, add more Zaatar if you want, finally add a bit of the grated cheese on top & place 1 piece of the dough on top of that and seal the edges with a fork, slightly make cuts in the dough and brush evenly with egg wash. Bake in the oven for 12-15 min or until golden, take it out and let it cool for 5 minutes before flipping it. Enjoy
