Spicy Tuscan Chicken Pasta Bake Recipe: 1 box (1 lb) rigatoni or ziti pasta, cooked until almost al dente Cheese Mixture: 15 oz ricotta cheese 1 cup mozzarella cheese, shredded 1/2 cup Parmesan cheese, grated 1 tsp Italian seasonings 1/4 cup parsley, chopped -Add all ingredients to a bowl and mix until fully combined. Set aside. Chicken mixture: 2 Tbsp olive oil 1 lb ground chicken 1 onion, diced 1 Tbsp Calabrian chili paste salt and pepper to taste Italian seasoning -In a high rimmed skillet over medium heat, add olive oil. Add onions, salt, and pepper. Mix until translucent. Add Calabrian chili and Italian seasoning and mix. Add the ground chicken, breaking it apart. Fully cook and set aside. Tuscan sauce: 1 1/2 cups chicken broth 1 cup heavy whipping cream 1 tsp smoked paprika 1 tsp garlic powder 1 tsp Italian seasoning 1 Tbsp Calabrian chili paste 1 cup Parmesan cheese, grated 1 cup spinach, chopped 1/2 cup sun-dried tomatoes -In a sauce pan over medium heat, add chicken broth, heavy whipping cream, smoked paprika, garlic powder, Italian seasoning, Calabrian chili paste, and Parmesan cheese. Whisk often for 10-20 minutes until sauce thickens. -Add spinach and sun-dried tomatoes. Simmer until spinach begins to wilt. -Add the sauce to the chicken and mix to combine. -Add 2/3 of the ground chicken sauce to the pasta along with the ricotta mixture. Mix to combine. The remaining sauce will be used below. Layering: 1 1/2 cups mozzarella cheese, shredded 1 cup Parmesan cheese, grated -In the bottom of a 9x13 baking dish, add a layer of chicken sauce. Then add a layer of pasta, mozzarella cheese, and Parmesan cheese. Repeat a second time so all sauce, pasta, and cheese has been used. -Preheat oven to 350°F and bake for 25 minutes. Then broil for 3-5 minutes until cheese is slightly browned and bubbly. Enjoy!
