#JoyofSidesSeason Ingredients 3.5 lb chopped fresh spinach 1 cup whole milk ⅔ cup Gruyere ½ cup Swiss and Gruyere cheese blend ½ cup shallots, diced 2-3 tbsp minced garlic 3 oz cream cheese 6 tbsp butter 3 tbsp flour 1 can Campbell’s® Cream of Chicken Soup Spice blend: ½ tbsp pepper ½ tbsp garlic powder ½ tbsp salt 1 tsp red pepper ½ tsp nutmeg Preparation Chop 5 bunches of spinach into 3rds. Rinse and set aside. Heat a large pot over medium heat. Add in butter and once slightly melted add in shallots and garlic. Saute until fragrant, 2-3 minutes. Add in half of the spice blend, toast for 1 minute. Thoroughly stir in flour to create roux. Continuously stir for 3-5 minutes. Slowly pour in milk and continuously stir until well combined, then add in the remaining spice blend. Once the bechamel sauce has formed, fold in 1 can of Campbell’s® Cream of Chicken Soup. Add in the chopped spinach, along with cream cheese, salt and pepper to taste. Then cover and reduce to low heat. Allow spinach to wilt for 3-5 minutes, remove the lid and stir from the bottom. Cover again and allow spinach to wilt for another 3-5 minutes. Remove the creamed spinach from the heat, then stir in the gruyere, and swiss-gruyere blend. Garnish with more cheese on top and red pepper flakes (optional)
