Street corn chicken bowl🌽🤍 marinade for chicken  - 6 boneless skinless chicken thighs  - 1/8 cup of olive oil  - handful of cilantro; chopped  - juice of one lime  - 1 tsp of garlic powder  - 1 tsp of onion powder  - 1/2 tsp of paprika  - salt  - pepper  Cilantro lime rice  - 2 cups of white rice; cooked - handful of cilantro; chopped  - juice of one lime  - salt  - garlic powder  Street corn  - 1 can of corn; drained  - 1/2 cup of mayo  - 1/2 of a lime juiced  - salt  - Elote seasoning from trader joe’s  Other toppings  - salsa - queso fresco or cotija crumbled  - guacamole  - cilantro  - lime  - jalapeños  For marinade, mix all ingredients together in a small bowl. Add chicken thighs to a container and piur marinade on top and mix to make sure all chicken is coated. Cover and let sit for 30 min or longer.  Then airfryer at 375F for 8 min then flip and cook for another 2-4 min.  For the rice, mix together cilantro and lime juice in a large bowl. Add cooked white rice and then add salt and garlic powder. Mix until well combined.  For street corn, add mayo, lime juice, elote seasoning, salt and minced garlic to a bowl and mix. Then add corn and mix until corn is coated. You can save a little sauce to top the bowl with if you want.
