#mealprep #easydinneridea #easydinner Ingredients: • 1 packet of Minute Instant Rice with Quinoa • 1 lb ground chicken • 1 tbsp avocado oil (or cooking oil of choice) • 1/2 medium yellow onion, finely chopped • 3 cloves garlic, minced • 1 cup low sodium chicken broth • 1 tbsp low sodium soy sauce • 1 tbsp oyster sauce • 1/2 cup carrots, sliced into matchsticks • 1/2 cup bell peppers, sliced into matchsticks • 1/2 cup English cucumber, seeds removed, sliced into matchsticks • Lettuce leaves (butter lettuce or romaine work best) • Chopped cilantro for garnish • Chopped peanuts for garnish (optional) Peanut Sauce: • 1/2 cup peanut butter • 1 1/2 tbsp low sodium soy sauce • 1 tbsp rice wine vinegar • 2 tbsp honey • 2 tsp sesame oil • 4-5 tbsp warm water, more if desired Instructions: 1. Prepare the meat and rice: Heat avocado oil in a large skillet over medium heat. Sauté onions for 3 minutes, add garlic and sauté for another minute. Add ground chicken, season with salt and pepper, and cook until browned (6-8 minutes). Pour in chicken broth, then add 1 packet of Minute Instant Rice & Quinoa. Flavor with soy and oyster sauce, stir, bring to a boil, reduce heat, cover, and simmer for 10 minutes until the water is absorbed. 2. Combine with veggies: Turn off heat, add sliced cucumber, carrot, and bell pepper, and toss together in the skillet. 3. Make the peanut sauce: Whisk together peanut butter, soy sauce, rice wine vinegar, honey, sesame oil, and warm water until smooth. 4. Assemble the wraps: Spoon the chicken, rice, and quinoa mixture into lettuce leaves. Drizzle with peanut sauce, and garnish with peanuts (optional) and cilantro. Enjoy!
