In a mixing bowl, whisk the almond flour, baking powder, salt, & monk fruit. Add the eggs, blended cottage cheese, and vanilla extract. Whisk until just combined. Preheat a large griddle/skillet over medium heat. Form 4 large, thick hot cakes. Cook for about 3 minutes on each side, or until golden and cooked through. Top with syrup and enjoy! Full detailed recipes can always be found on my blog (linked in bio) ❤️ https://cookingkatielady.com  Almond Flour Snowball Cookies ☃️⛄️ A healthier version of one of my favorite Christmas cookies that is just as good! 😍 Also known as Sandies 🎄 👩🏻‍🍳 INGREDIENTS: 1️⃣ 2 cups organic almond flour 2️⃣ 6 tbsp grass fed butter, softened (can also substitute coconut oil if desired) 3️⃣ 1/4 cup powdered monk fruit substitute 4️⃣ 1/2 tsp vanilla extract 5️⃣ 1/4 tsp salt 6️⃣ Chopped nuts (optional if desired) 👩🏻‍🍳 INSTRUCTIONS: Preheat your oven to 325°F. Line a baking sheet with parchment paper or a silicone baking mat. Combine all ingredients (except for the nuts if using) until just combined. Gently mix in the nuts. Chill dough. Form 30 snowball cookies. Bake for 10-12 minutes. Allow the cookies to cool. Dust in additional powdered monk fruit & enjoy! It’s honesty the best apple crisp I’ve ever had & made with simple, clean ingredients! 👩🏻‍🍳INGREDIENTS: FOR THE BASE 8-9 Granny Smith apples (2.5 lbs apx.) ⅓ cup organic maple syrup 3 tbsp cornstarch Zest of 1 large orange 1 tbsp fresh orange juice  1 tsp vanilla extract
1 tsp cinnamon 1 tsp ground ginger 1/2 tsp nutmeg FOR THE TOPPING 1 cup packed organic almond flour
1/4 to 1/2 cup brown monk fruit, coconut sugar, or sweetener of choice (do 1/4 cup if you don’t like super sweet) 1 tbsp organic molasses
1/2 tsp cinnamon 1/2 tsp ground ginger
1/2 tsp salt
