This is how you make this delicious, healthy, crispy, tender chicken in no time.  You will need: For the breading coat, 1/2 cup Parmesan cheese  1 1//4 cups plain panko crumbs  1/2 tbsp Italian seasoning  1 1/2 tsp salt  1 tsp black pepper  For the marinade: 21/2 pounds chicken breast cubes  1 tbsp Dijon mustard  1/4 cup white drinking wine  Zest of 1 lemon The juice of 1/2 lemon 3 cloves of garlic grated finely  1 tsp black pepper  1 1/2 tsp salt  1/2 tbsp Italian seasoning  2 tsp red pepper flakes  1/4. Up extra virgin olive oil  Preparation: Start by cutting the chicken breasts into 2 inch cubes. They should be even in size but not perfect. Make the marinade by adding the Dijon mustard, white wine, lemon zest and juice, garlic, seasonings, olive oil and mixing. Add the chicken cubes and leave them to marinate for 1 hour.  Prepare the breading by mixing all the dry ingredients listed above. Wait for an hour to allow the chicken to marinate then cover all sides with the panko crumb mixture. Place on top of a baking sheet lined with foil and parchment . Don’t over crowd the pan, spray the chicken with olive oil spray and bake at 400 degrees F for 18-20 minutes. You can use a thermometer to check the internal temperature if you like. Serve with your favorite sauce, on top of a salad, make a wrap or serve with pasta and enjoy.
