Blueberry Crumb Cake 🫐🫐 This crumb cake is so moist and the lemon blueberry combo is the best! One of my favorite breakfast treats. Full recipe below.  Ingredients: Crumb:  * 3/4 cup brown sugar  * 1/2 cup cup all-purpose flour * 6 tbsp unsalted butter, melted Cake: * 2 cup all purpose flour  * 1 1/2 tsp baking powder  * 1/4 tsp salt  * 8 tbsp unsalted butter, softened * 1 cup granulated sugar  * 1 lemon, zested * 2 eggs, room temp * 1 1/2 tsp vanilla extract * 2/3 cup milk  * 2 cup blueberries  Lemon Icing:  * 1 cup powdered sugar  * 1/2 fresh lemon juiced  * 1 tbsp heavy cream  Directions:  * Preheat oven to 350°F. Grease 8x8 square baking dish or you can use a 9” round springform pan.  * Make crumb by combining all crumb ingredients together with a fork. Set aside.  * Combine flour, baking powder and salt in a small bowl and set aside.  * Beat butter and sugar till fluffy, about 2 minutes.  * Add lemon zest, eggs and milk and beat till combine.  * Add one cup at a time of flour mixture till combine. Batter will be thick. Fold in blueberries.  * Place half batter in baking dish and smooth out. Sprinkle layer of crumb in center and add remaining batter and sprinkle remaining of crumb on top.  * Bake for about 50-55 minutes if using a 8x8 baking dish. Would check as early as 45 minutes for a 9” round dish. Remove from oven and let cool.  * Make icing by mixing all ingredients together and drizzle on top of cake. Blueberry Baked Oatmeal Cake for breakfast anyone? These baked oats are like a cake and oatmeal mix. It's fluffy with a great oat texture. @antioxidantsolutions blueberry juice gives this oatmeal cake a delish blueberry flavor. They have an amazing lineup that is great for drinking, baking and cooking! 1/2 cup Antioxidant Solutions Blueberry Juice 1/2 cup milk 2 eggs ½ cup coconut oil, melted or butter 1/2 cup greek yogurt 1 ½ cups rolled oats 1 cup 1.1 GF flour or all purpose flour 1/2 cup vanilla protein powder 1/2 tsp cinnamon ⅛ tsp ground nutmeg 1 tsp baking powder 2 cups blueberries 1 lemon juiced 2 tbsp hemp hearts 2 tosp ground flaxseed ½ cup coconut sugar Preheat the oven to 350 degrees. Spray a 7x10 x 2" sides with nonstick baking spray. Mix the wet ingredients together, and the dry ingredients together. Then add the wet to the dry. Recipe ⬇️: Blueberry Cake - 2 cups all-purpose flour        (I used @King Arthur Baking ) - 2 1/2 tsp baking powder -1/2 tsp salt - 1/2 cup unsalted butter, rom temp        (l used @Land O’Lakes ) - 1 cup granulated sugar - 1/4 cup yogurt         (Dannon plain or sour cream) - 1 egg - 1/2 cup milk, room temp - 1 tsp vanilla extract - 2 1/2 cups blueberries + 1 tbsp flour         (for tossing) Almond Praline: - 1/2 cup salted butter - 1/2 cup granulated sugar - 2 tbsp maple syrup - 1 tsp almond extract - 1 tsp vanilla extract - 1 tbsp flour - 1 tbsp heavy cream - 1 1/2 cups sliced almonds Instructions: Preheat the oven to 375F. Grease and line a 10" spring form baking pan or cake pan with parchment paper and set aside. In a medium bowl, whisk together the flour, baking powder and salt In a separate large bowl, cream the butter and sugar together until smooth for about 2-3 minutes Add yogurt and egg and mix until incorporated. Add in the milk and mix until combined. Add the flour mixture to the wet mixture, and mix until just combined, about 15 seconds on low speed until just mixed together being sure to scrape the sides. Do not to over-mix. In the same medium bowl you used for the flour mix, toss the blueberries with 1 tbsp of flour. Pour berries into the batter and gently fold. The batter will be very thick so you'l need to level the batter out gently as to not burst the blueberries. Set aside while you prepare the almond praline topping. Almond Praline Crunch Topping In a medium saucepan combine all ingredients over medium heat. Bring to a simmer while continuously stirring, until it is slightly bubbling and the sugar has dissolved. Continue to cook for 3-5 minutes, until it resembles a light caramel color and is gooey. Remove from the heat and pour the topping directly on top of the cake batter in the pan. Make sure tongently spread praline topping to all edges of the pan. Bake at 375F for 45-50 minutes or until a toothpick inserted into the middle comes out clean or with moist crumbs and the topping is golden. Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and transfer to a wire cooling rack Slice into 12-14 slices and serve warm with ice cream or whipped cream.
