Boursin Orzo w/ Chicken Sausage & Sundried Tomatoes **Note: I forgot to add heavy whipping cream at the end, I think it would’ve helped melt the parmesan and made it more creamy so I suggest adding it. But you don’t have to, it’s optional. Ingredients: - 4 chicken sausages, sliced - 1 block Boursin cheese (garlic herb) - 2 cups orzo - 1-2 tbsp extra virgin olive oil (or use the oil from the sundried tomatoes jar) - 1/2 cup sundried tomatoes - 4 cups chicken bone broth - 1 tbsp minced garlic - 1/2 tsp oregano - 1/2 tsp red pepper flakes - Pinch of salt & pepper - 1 handful spinach - 1/2 cup Parmesan cheese - 1/2 cup heavy whipping cream Directions: 1. Heat oven to 425°F 2. in a large oven safe pot, add the block of Boursin to the middle. Pour the orzo around it and drizzle with olive oil. 3. Add the sundried tomatoes, bone broth, garlic, and seasonings. 4. Gently stir around the Boursin and then cover with foil and bake for 30 minutes. 5. Whiles it bakes, cook up the chicken sausage in a skillet. 6. After the 30 min, Take it out and stir and then cover and bake for another 10/15 minutes or until the orzo is cooked and the liquid has been absorbed. 7. Add in the spinach, chicken sausage, heavy whipping cream and Parmesan cheese. 8. Serve immediately & enjoy!
