Spread the raw almonds on a baking sheet and roast for 10-12 minutes. This helps bring out their natural oils and enhances flavor. 2. Transfer the warm almonds to a food processor or high-speed blender. Process for about 10-15 minutes, pausing occasionally to scrape down the sides. The almonds will go from chopped to a thick paste, and eventually turn creamy as their oils release. BE PATIENT! 3. Once the almonds are smooth and creamy, add the maple syrup, cinnamon, and salt. Blend for another 1-2 minutes until fully incorporated. 4. Transfer to a jar and store in the at room temperature for 3-4 weeks!
