My husband NEVER had Vaghareli khichdi this way before we were married but now he craves it every week. SAVE this because It’s simple but so comforting and delicious ! How to make it: Heat oil over medium high heat and add cumin seeds followed by diced green chilis and finely chopped garlic Add red onions cut into short slices and cook with pinch of salt until soft then add red chili powder, pinch of garam masala, cumin powder and coriander powder. Let this cook for 3-4 minutes and then add the  leftover Khichdi (bring the leftovers to room temp first). You may need to add a couple tablespoons of water to get it to soften up. I also add chopped spinach because why not.  Top it off with lots of chopped cilantro- this version of Khichdi  shouldn’t be super masala heavy, in fact sometimes the only spice my mom adds is red chili powder and salt and it’s still so delicious !! Less is more here and while I don’t have an exact recipe- it’s simple enough to wing it ! The leftover khichdi also already has salt so taste and season as you go ! To make plain khichdi: combine 1/2 cup Basmati Rice, 1/2 cup Toor Dal (I use oily), with 3 tbsp butter (you can use ghee), 1/4 tsp turmeric powder, 2 1/4 cups water and 1 tsp salt in an Instant Pot. (Be sure to rinse the rice and dal before) Mix everything well, close the lid, set to high pressure cook for 8 minutes and then quick release after 10 minutes or let it natural release. You’ve gotta try this Masoor Dal recipe / adult and kid friendly ! Nothing wrong with nuggets, pizza and pasta but I’m always on a mission to diversify my kids palate and get them to eat nutritious meals!   Feel free to mix up the veggies, use what you have ! 1 tbsp ghee 1/2 tsp cumin seeds Pinch of hing 1/2 small onion, finely diced 1/2 red bell pepper, diced small 1/2 zucchini, diced small 1 small carrot, peeled and finely diced 3/4 tsp salt 4 cloves garlic, grated 1/2 tsp garam masala 1/2 tsp coriander powder 1/2 cup whole masoor dal (brown  lentils) 2 cups water Handful chopped cilantro Handful shredded cheese for serving  DIRECTIONS With the Instant Pot on saute mode, add the ghee followed by the cumin seeds and hing.Once the cumin is sizzling, add the onions and cook until translucent and slightly golden. Add the red pepper, zucchini, or whatever veggies you have and after cooking for a few minutes add the garlic, salt, and dry spices. Cook until the garlic is fragrant. Then toss in the rinsed and drained lentils along with 2 cups water. Hit cancel on the IP, change the mode to High Pressure Cook for 15 minutes and let natural release. If you want it more soupy then add more water at this point. If it’s too soupy, put it back on sauté mode and let it simmer until it thickens. Lastly, add in the chopped cilantro and squeeze of lemon if you prefer. Taste and adjust salt.
