let’s make happy hour at home 🍸🍊 welcome to ep. 3 of friday night bites, where every week I’m serving up easy + delicious small bites recipes & the cocktails to pair with them. tonight we’re wedding planning, which calls for a dose of caffeine and a moment of appreciation for all our new @crateandbarrel registry items 🫶🏼 you can shop our registry at the 🔗 on my page! #cratepartner CARAJILLO: 1.5oz espresso 1.5oz licor 43 1.5 oz tequila reposado // shake all ingredients over ice, pour, and garnish with freshly-grated nutmeg and an optional orange twist. CHICKEN LOLLIPOPS 12 chicken drums ¼ cup flour ¼ cup cornstarch ½ tbsp of these seasonings: paprika, garlic powder, onion powder, salt // to create your chicken lollipops, start by cutting around the bottom circumference of the drumstick. use a knife to carefully push the chicken upward, creating a lollipop shape. next, mix the above dry ingredients in a large bowl. use a paper towel to pat the chicken dry, then add to the dry mix and coat thoroughly. remove and spray with avocado oil, flipping the lollipops to lightly coat both sides. air fry at 425º F for 18 mins, then dip in the teriyaki sauce (recipe below). TERIYAKI SAUCE ½ cup soy sauce ¼ cup gochujang 2 cloves garlic, minced 3 tbsp honey 3 tbsp rice vinegar ¼ cup water  1 tbsp cornstarch green onion (for garnish) sesame seeds (for garnish) // in a saucepan, combine soy sauce, gochujang, garlic, honey, and rice vinegar. in a bowl, combine the water and cornstarch to create a cornstarch slurry (to thicken the sauce). mix, then immediately add to the sauce pan and stir to reach desired consistency. then, remove from heat and dip your chicken lollipops in the sauce. serve with blue cheese (recipe below) and garnish with sliced green onions and sesame seeds. HOT TAKE: Carajillos + Tequila = Cocktail of 2025 *Disclaimer: One Paper Plane was harmed in the making of this video* Paper Planes enjoyed their time in the spotlight years ago, but I don't believe they're a strong candidate for the cocktail of 2025. Instead, I see the Carajillo with tequila as a more suitable contender. ☕️ Just last year, Licor 43 set out to crown the Carajillo as the 'it' cocktail. However, we influencers had other ideas, declaring the Batanga as the cocktail of 2024 instead. As expected, other creators, cocktail blogs, retail outlets, and even Martha Stewart started talking about this classic tequila and Coca Cola highball. 🔪 This year, I find myself agreeing with Licor 43, but with one twist. I believe the Carajillo tastes significantly better with the addition of a Reposado tequila. It’s February and we’re already naming the Carajillo the drink of 2025.
