Cut chicken thighs into pieces, chop green onions into sections, and finely dice the white parts of the green onions. 	2.	Marinate the chicken for 30 minutes with 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, some black pepper, 20g of starch, and a bit of cooking oil. 	3.	Sear the chicken until both sides are golden and fragrant. 	4.	Add the green onions sections and stir-fry until aromatic. Eating healthily does not have to mean boring! Because I am a sweets girl, if I’m choosing to eat healthy, it has to be packed with flavor. This one-pan chicken dish with dates, olives, and quinoa is a delicious and comforting go-to dinner idea. Ingredients (Feeds 3-4 people)    • 4-6 Bone in or boneless Chicken Thighs (I prefer skin on but both work here) • 2 Tablespoons Extra Virgin Olive Oil  • Salt & Freshly Ground Black Pepper • ½ cup Italian or Spanish Green Olives (pitted and cut in half) (I prefer Casteveltrano or Spanish olives) • 1 Large Shallot Diced (about 1/3 cup when diced) • 2 Large Garlic Cloves, Minced • 1/2 Teaspoon Ground Cumin • ½ Teaspoon Ground Coriander • Dash of Red Pepper Flakes  • 1 1/2 tablespoons Ginger paste or jarred Minced Ginger (if freshly grated use 1 1/2  teaspoons) • ½ Teaspoon Ground Cinnamon • 2 3/4 Cups Chicken stock (or broth) • 7 Medjool Dates, Pitted and Chopped • ½ Lemon, juiced • 1 1/4 cups of Quinoa (not instant) • 1/4 cup fresh flat leaf parsley, chopped  Steps in the comments on my Instagram!  #chickenrecipe #onepotmeal #onepanmeal #easydinner #recipes #chickendish #dates
