Chilaquiles Rellenos Masa: 2 1/2 C Masa Harina 1/16 salt (pinch) 1 2/3 warm water I used King Arthur’s brand, but I would recommend following the recipe for whichever company you use. Directions: Stir masa & salt. Add warm water, stirring to make a dough. Work dough until smooth and firm, about one minute. Roll into balls and flatten on tortilla press. Or you can use a ziploc/parchment paper and press with a cast iron pan. Add cheese (I used oaxaca) press edges together. Fry in oil on both sides a few minutes a remove. Top with salsa verde, crema, cojita cheese, a fried egg, avocado, and cilantro. Salsa verde: 12-15 tomatillos 2 jalapeños 1/2 onion 3-4 garlic cloves 1 tbsp chicken bouillon powder 1/4-1/2 c water 1/2 tsp dried oregano 1 small bunch of cilantro Directions: Char tomatillos, jalapeños, onion, and garlic in a pan for about 5-10 minutes. Let cool and blend with water, bouillon, water, oregano, and cilantro.
