Soup Series Part 11: Chicken tortilla soup with homemade crispy tortilla strips made using @Chosen Foods 100% pure avocado oil spray. #chosenpartner Ingredients: 2 large chicken breasts 3 tbsp Chosen Foods 100% Pure Avocado Oil 1 onion, diced 1 red bell pepper, diced 1 jalapeno, diced 6 cloves garlic, minced 2 tbsp tomato paste 1 tsp salt ½ tsp pepper  ½ tsp garlic powder ½ tsp onion powder ½ tsp cumin 1 tsp chili powder 1 28 oz can crushed tomatoes 1 4 oz can diced green chilis 4 cups chicken stock 1 15 oz can of corn, drained  1 15 oz can black beans, drained and rinsed  Crispy Tortilla Strips: Corn tortilla, cut into thin strips Salt, to taste Chosen Foods 100% pure avocado oil spray Toppings (if desired): Sour cream Shredded cheese Sliced jalapeno Avocado Green onions Cilantro Lime juice  Crispy tortilla strips Method: Season chicken breast. I coated it with 1 tbsp Chosen Foods 100% pure avocado oil and then seasoned with salt, pepper, garlic powder, onion powder, cayenne, cumin, and chili powder). In a large pot, heat up 1 tbsp Chosen Foods 100% pure avocado oil and cook your chicken until cooked through or 165 degrees internal temp. I like to slice my chicken breasts in half before cooking for so they cook more evenly. I did about 4-5 minutes a side. Set aside, let cool, and shred.  In same pot, add 1 tbsp avocado oil over medium heat. Add onion, bell pepper, and jalapeño and saute for a few minutes before adding a splash of stock to deglaze the pan. Scrape up all the bits on the bottom. Add garlic, tomato paste, and seasonings and let cook for a few minutes before adding green chilis, crushed tomatoes, and chicken stock. Cover and let simmer for 15 minutes. Add in corn, beans, and cooked chicken. Serve it up and top with your favorite toppings.  For the tortilla strips: Preheat oven to 375 degrees. Cut corn tortillas into small strips. Coat in Chosen Foods 100% pure avocado oil spray and season with salt. MULTI LAYER WARM ENCHILADA DIP If you want an easy, high protein, incredible dip for game day, or really any kind of day, you’ve got to make it. It’s got all sorts of layers of goodness, and I topped it all off with my everyday sauce made with @Chosen Foods Classic Mayo, sour cream, cilantro, jalapeños, lime, and garlic. This is without a doubt one of my favorite sauces. This is my go to mayo - made from 100% pure avocado. It contains good fats and such a good base for so many of my sauces. Here is how I made it: 1.Preheat oven to 400F. 2.Bring a pan to medium heat, spray with Chosen Foods Avocado Oil spray, add 1lb ground beef, 1.5 tbsp taco seasoning, and break it down continuously until you have browned and finely minced ground beef. You dont want big chunks. Remove from heat. 3. Grab an oven safe dish, and spread 1 can of refried beans at the base. If you are lowcarb, you can skip the beans or use mashed cauliflower instead. 4.After the layer of refried beans, add the layer of ground beef and top with 8oz of salsa or 8oz of enchilada sauce. 5.Add a layer of healthy queso. I made this by processing 1 16oz tub of cottage cheese with 2 adobo peppers, 1 tbsp of adobo sauce, 2 small garlic cloves, 1/2 tbsp onion powder, and 1/2 tbsp paprika.  6.Top the queso with a layer of shredded cheese and pop into the oven for 15 minutes. 7.While thats going, make the sauce by mixing 3 tbsp Chosen Foods Classic Mayo, 2 tbsp sour cream or yogurt, the juice of 2 limes, large handful of cilantro, 1 small jalapeño pepper, 1 garlic clove, and a pinch of a salt. Process well. Taste and adjust. 8.When the dip is out of the oven, top it with avocado chunks, sliced black olives, diced jalapeño, finely chopped cilantro, and lots of sauce. 9.Grab your vessel of choice and ENJOY! Perfect for breakfast or a weekend brunch, it’s easy, delicious, and exactly what comfort food should be!  #chosenpartner  Ingredients For the Hash Browns (Makes about 6 hash browns): Avocado oil (for frying) 2 large russet potatoes 1 ½ tbsp potato starch 1 egg 1 tsp ground black pepper ¼ tsp garlic powder (optional) Salt, to taste For the Sandwich (Makes 1): 2 tbsp avocado oil mayo (e.g., Chosen Foods Classic Mayo) 2 spicy-sweet pickled jalapeño slices (optional) Handful of fresh arugula or lettuce leaves 1 egg (cooked sunny-side up) 1 tsp chili oil (optional) Fresh chives, chopped (optional) 1 brioche bun Instructions Make the Hash Browns Peel and cut the potatoes into chunks. Boil them in water for 5-7 minutes until slightly tender but not fully cooked. Drain and let cool. Once cool, grate the potatoes into a bowl. Add the potato starch, egg, black pepper, garlic powder (if using), and salt. Mix thoroughly until combined. Line a baking sheet or large plate with parchment paper. Shape the mixture into patties-round or traditional hash brown shapes. Freeze the patties for 20-30 minutes to help them hold their shape while frying. Heat a generous amount of avocado oil in a pan over medium heat. Fry the hash browns for 5-7 minutes on each side until golden brown. Reduce the heat if the oil gets too hot to avoid burning. Place the cooked hash browns on a paper towel-lined plate to absorb excess oil. Cook the Egg: Heat a non-stick pan over medium-low heat. Add a small amount of avocado oil. Crack the egg into the pan and cook until the whites are mostly set. Cover the pan with a lid to finish cooking the whites while keeping the yolk runny. (Optional: Flip the egg if you prefer the yolk cooked through.) Assemble the Sandwich: Toast or grill the brioche bun to your liking. Spread 2 tbsp of avocado oil mayo on both halves of the bun. The key is a neutral oil with a high smoke point–which is why we’re using Chosen Foods Avocado Oil. Plus, it’s non-gmo and glyphosate free + has good fats from avocados 🥑 Recipe - First, start by cooking 2 cups of sushi rice following the directions on the bag, or your preferred method. I rinse my rice, and then add the 2 cups of rice to a pot with 4 cups of water. I bring that to a boil, and then turn to low and cover until it’s cooked through (about 10 minutes) - Once the rice is cooked, transfer to a bowl and let it cool for about 10 minutes. - While it’s cooling, mix together ¼ cup of rice vinegar, 2 tbsp of cane sugar, and 1 tsp of salt. Mix this into the rice. - Transfer the rice to a plastic wrap lined 9 x 9 baking dish and press flat. Place in your fridge for at least one hour. - Then, remove the rice from the baking dish and cut into squares. - Fill a saucepan or pot about 1/2 inch high with Chosen Foods Avocado Oil over medium heat. - Once the oil is hot (I test it with a piece of rice–if the rice sizzles, then the oil is ready!) Add the rice squares, being careful not to overcrowd the pan. Fry on each side for about 3 minutes, or until golden brown and then transfer to a wire rack. This keeps the rice crispy!  - Then, mix together the spicy tuna–4 oz of finely diced sushi grade tuna, 2 tbsp of sliced green onion, ½ tsp of sesame oil, 1 tbsp of sriracha, 1 tbsp of Chosen Foods Avocado Oil Mayo, and 1 tsp of sesame seeds. - Top the crispy rice with sliced avocado, spicy tuna, a jalapeño slice, more sesame seeds, soy sauce, and enjoy!
