I made this soup for the first time last night, and my husband actually said, “This is the best soup I have ever had in my life.” WHAT A WIN!! Creamy Parmesan Italian Sausage Ditalini Soup Ingredients: 1 lb ground Italian sausage 1 tbsp olive oil 1 small onion, diced 3 garlic cloves, minced 4 cups chicken broth 1 cup Ditalini pasta 1/2 tsp dried oregano 1/2 tsp dried basil 1 cup heavy cream 1 cup shredded Parmesan cheese Salt and pepper, to taste Directions: Cook the Sausage: In a large pot, heat olive oil over medium heat. Add Italian sausage, breaking it into crumbles, and cook until browned. Remove sausage from the pot and set aside. Sauté the Aromatics: In the same pot, add olive oil, garlic, and onion and cook until the onions are translucent. Add Broth and Herbs: Pour in the chicken broth, then stir in oregano and basil. Bring to a boil. Cook the Pasta: Add the Ditalini pasta to the boiling broth and cook for about 8 minutes, until pasta is tender but firm. Make it Creamy: Lower heat to medium. heavy cream, and Parmesan cheese. Simmer for 5 minutes, allowing soup to thicken. Add back in the sausage and stir. Serve and Garnish: Ladle soup into bowls, garnish with fresh parsley if desired, and serve warm.
