Who else loves a good comfort meal?! 🤤👇🏽 KETO STUFFED POBLANO PEPPERS✨ 🌶 Ingredients: • 3 large poblano peppers • 1 lb ground turkey (or beef) • ½ cup cauliflower rice • ½ small onion, diced • ½ cup diced tomatoes • 1 tbsp olive oil • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or your choice) • 1 cup melted queso • ½ tsp cumin • ½ tsp smoked paprika • ½ tsp chili powder 🌶 • ½ tsp oregano • ½ tsp garlic powder • ½ tsp onion powder • Salt & pepper to taste • Fresh cilantro for garnish 🔥 How to Make It: 1️⃣ Preheat oven to 400°F (200°C). Roast poblanos on a baking sheet for 10 minutes, then remove & let cool. Slice them open & remove seeds. 2️⃣ Lower oven temp to 375°F (190°C). 3️⃣ Heat olive oil in a pan & sauté onions until soft. Add ground turkey & cook until browned. 4️⃣ Stir in cauliflower rice, diced tomatoes, & all seasonings. Cook for a few minutes until well combined. 5️⃣ Stuff each poblano with the filling, top with shredded cheese, & bake for 10 minutes or until melted. 6️⃣ Drizzle warm queso on top & garnish with fresh cilantro.
