Dinner for my family of 4 steak, mashed potatoes and asparagus Here’s the recipe Steps * Roast the asparagus: Preheat the oven to 400°F (200°C). Place asparagus in a baking dish, drizzle with olive oil, sprinkle with garlic salt, and top with mozzarella and Parmesan. Roast for 20 minutes. * Make the chimichurri sauce: Mix parsley, minced garlic, red chili flakes, oregano, lemon juice/vinegar, olive oil, salt, and pepper in a small bowl. Set aside. * Prepare the mashed potatoes: Boil potatoes in salted water for 15-20 minutes. Drain and transfer to a mixing bowl. Mash with roasted garlic, butter, Mexican table cream (or sour cream), salt, and pepper. Stir in chives (optional). * Cook the steak: • Season steaks with garlic & herb seasoning, salt, and pepper. • Heat avocado oil in a hot pan over medium-high heat. Sear steaks for 2-3 minutes per side. • Remove steaks and lower heat. Add garlic herb butter, garlic cloves, and optional thyme or rosemary to the pan. • Return steaks to the pan, baste with butter, and flip every 2 minutes until desired doneness (use a thermometer: 130°F for medium-rare). • Let steaks rest for 5-10 minutes before slicing. * Plate and serve: Drizzle steak with chimichurri sauce. Plate with mashed potatoes and roasted asparagus.
