Beef Caldereta Ingredients * 2 carrots(peeled and cut into chunks) * 3 white potatoes(peeled and cut into chunks) * 1 onion(minced) * 6 cloves garlic(minced) * 2 bell peppers(cut into chunks) * 2.5 lbs beef chuck(cut into bite-sized pieces) * Salt and pepper to taste * Neutral oil * 2 tbsp tomato paste * 85 grams liver spread(1 can) * 14 oz crushed tomatoes * 2 bay leaves * 2 cups beef stock * 1 tbsp fish sauce * 1 tbsp soy sauce * 1 tbsp oyster sauce * 2 tbsp sugar * 3 thai chilies(halved) * 1/2 cup green olives(pitted) * 1/3 cup frozen peas Instructions 1. Prep all veggies and slice beef into bite-sized pieces making sure to season generously with salt and pepper. 2. Heat heavy pot with 3 tbsp of neutral oil on high heat and sear beef in batches so all sides or browned. 3. Remove beef, reduce the heat to medium, and sauté onions and garlic in the same pot making sure to scrape any bits left on the pan. 4. Add tomato paste and cook for a few minutes before adding liver spread and crushed tomatoes. Mix until fully incorporated. 5. Add back the beef along with bay leaves and cover with beef stock. Season with fish sauce, soy sauce, oyster sauce, sugar, and Thai chillies. 6. Bring to a simmer, and cook low and slow for 3-4 hours with the lid on until the beef is tender. 7. Deep fry carrots and potatoes at 350F for 4-5 minutes until browned. 8. Add fried carrots and potatoes, bell peppers, and green olives in the last 20 minutes of cooking or until the potatoes are fully cooked through. 9. Lumpia (Filipino Spring Rolls). Every time I am at a restaurant I always want to try these but can’t due to pork being the main ingredient. I am so excited to share this recipe as I didn’t know what I was missing all this time! It has such an incredible flavor . I wish I had shrimp too as that’s also one of the main ingredients. If you do then don’t forget to add 3/4 pounds of ground shrimps to enhance the flavor.  I am also on Instagram. Simply search handymama_of3 Prep time: 45 minutes  Cooking time: 30 minutes Makes: 18 Ingredients: 1 pound ground chicken ½ cup chopped shallots 1 tbsp crushed garlic 1 tsp crushed ginger  ½ cup thinly sliced carrots ½ cup chopped scallions  ½ cup thinly sliced green cabbage 2 tsp ground black pepper 2 tsp soy sauce 30 lumpia wrapper or egg roll wrappers  3 cups vegetable oil for frying  Instructions: In a large bowl add all the ingredients. Mix thoroughly. Set it aside for 30 minutes. Then take a piping bag and place the mixed filling. Layer the wrappers on top of each other and keeping an inch of space between each. It will help the wrapping process easier.  Now pipe the meat in a thin layer. Roll and seal the lumpia by dipping your finger in the water. Heat up the oil and gently place the lumpia in the oil. Fry on a medium low heat as you want the meat to cook through and the wrapper to not get overcooked or burnt.  Remove from the pan and place it in an upright position. It will help drain the access oil. Cebuchon /Lechon belly  9-10 lbs skin on pork belly 2-3 tbsp course salt 1-2 tbsp ground black pepper  half a pack of magic sarap- optional 2 heads garlic, minced 1 medium shallot, chopped 3-4 stalks of lemon grass, chopped 5-6 stalks of green onions Steps
 
 Prepare your ingredients. Wash thawed pork belly. Pat dry with paper towels. Place on a roaster rack facing up. In my case, my roaster rack is not big enough so I used a half sheet pan with baking rack. Poke the skin using a needle meat tenderizer. If you don’t have the tenderizer, a small knife is fine. Score the meat using a sharp knife. Rub salt all over the meat. Add ground black pepper, garlic and shallots on the surface. Crush the lemon grass leaves, cut the stalks diagonally and place them in the middle. Tie pork belly with a butcher’s twine forming a log. Marinate overnight. 
 
 Roasting
 
 First, I roasted the belly over boiling water at 180’F for 2.5 hours. Replenish boiling water as needed. After 2.5 hours, increased the temperature to 320’F and roast the belly for 2.5 hours, flip the meat on each side every hour. Replenish boiling water as needed. Lastly, increase the heat to 420’F and roast for 2 hours, flip the meat on each side every hour. 
 
 Tip: I noticed that each oven is built differently. Even the heat distribution is different. When we went to Las Vegas it took 8-9 hours to roast an 11 lbs of pork belly. So, keep an eye when you’re roasting the pork belly on high heat (420’F).  Since we didn’t have Mang Tomas sauce, we enjoyed it with cucumber salad with black pepper, sugar, rice vinegar, fish sauce and calamansi juice. So good you’ll! 🤤
