This James Beard nominated restaurant in Wilmington, Delaware is the next spot to check out for a #datenight @bardeawilmington @bondfiremedia @Bardea Restaurant Group Just a quick drive for us from South Philly, we were excited to get a chance to try Bardea since we heard such positive things. Their innovative menu is inspired by Italian cuisine and each dish is deliciously crafted with seasonal inspiration. We loved their option to create a mocktail based on your flavor profiles and they also had a great variety of cocktails. For our dishes we enjoyed the avocado, the crab taco (our favorite bite!), the spicy honey pizza, the ravioli (stuffed with duck confit, in a Gorgonzola sauce) the pork collar and the washugyu tri-tip. We recommend trying a few small plates but they also have “feed the table” options which will include a larger protein for the whole table to enjoy. Sharing one of my favorite creations of 2024 while I battle being sick for another day or so…. The Smoked Smashburger! __________ I was in the mood for my weekly smash burger… but wanted to try something different! I already had the @recteq_official DualFire going and figured why not see if this works! Start by form 3-4 oz balls for your smash Pattie’s, and get them on the smoker for 25-30 minutes at 180-200°F. If your smoker can do 180, I’d let this smoke for 35-40 mins! Then we can fire up the @recteq SmokeStone and smash these babies down! I seasoned them with a seasoned salt before flipping to show off that beautiful crust! Top these off with the superior cheese for a burger, American, and let them melt! And if you are against American cheese… try @New School Quality American 🧀 , you will absolutely change your mind! Then I put these all together in the simplest form! Just a toasted bun, mustard, white onion, and pickles! These were a hit, and the crust was next level! I’ve seen Parmesan crusted steaks on menus before, but never felt like it was worth getting… well I’ve officially changed my stance on that after trying it a few times myself! Ingredients for Parmesan crust: • 1 cup of Mayo • 1 cup of Parmesan (I usually add a little extra!) • 1 tbsp thyme • 2 cloves minced garlic Just mix that together in a bowl and you’re set! The recipe for the steak is simple! Reverse sear over charcoal or in your oven/smoker at 225°F until the internal hits about 120° and if you like it more on the rare side, aim for 110°-115°F. Then you want to take it out and coat the top with the Parmesan mixture. Broil for atleast 5 minutes, and pull it out when the internal hits 125-127 and let it rest! I like to rest it for 10-15 mins. Then slice it up and enjoy!
