✨ Romanticizing the HOMEMADE KITCHEN RESTOCK ✨ People ask sometimes how I’m able to make so much food from scratch on such a regular basis. For me, it’s a mix of practicality, privilege, and a mindset shift. 
 Cooking with whole ingredients isn’t just budget-friendly—it’s a sustainable way to reduce food waste, minimize packaging, and connect with the food that fuels you. So many of us are so disconnected from what’s on our plate! Plus, homemade kitchen restocks don’t have to be complicated! Simply chopping veggies or opening a few cans of beans to store in the fridge for those busy days when lunch is just thrown together is a great starting point.
 I also know that for myself, not having kids or working a 9-5 gives me more time to lean into this hobby, which is a privilege in and of itself. If you struggle to get creative in the kitchen or see prepping food as a chore, here’s my tip for making it enjoyable: throw on some headphones and turn on a podcast, play your favorite playlist, or call a friend or family member while you’re in the kitchen. It makes the time fly and turns cooking into a moment of connection or relaxation. It also helps to get me dialed in. Once the headphones are on, I’m on the zone and it feels more like “me time” that also helps me feed myself in the end.
 Choosing to romanticize this process—seeing it as a creative outlet and an act of care—has changed the way I approach my time in the kitchen. Overall, making this a part of my day to day has changed my life and my relationship to food, and saved me so much money and waste.

Time for a homemade kitchen restock 🔪🤍 This week’s restock doubles as a fridge cleanout, because I didn’t buy any new groceries and planned all my recipes around what I already had on hand, prioritizing items near expiration that needed to be used up.

With just a couple hours of time commitment and no extra dollars spent, I ended up with all of this:

- A fresh pot of cold brew - A batch of homemade lmond milk - Brown sugar pumpkin spice coffee syrup - A bottle of iced green ginger tea with honey - A few servings of nutrient-dense peanut butter overnight oats - A large batch of carrot turmeric soup - A big pot of pesto pasta with vegan chicken and cherry tomatoes - Almond oat chocolate bars - A loaf of sourdough discard sandwich bread With grocery costs being what they are right now, I’ve found that learning to make more household staples from scratch has made a big financial difference. Simple things like baking bread, making plant milks & brewing iced teas at home may take a little bit of extra time but are well worth it in terms of cost analysis. Plus, I get to determine which ingredients I use & which I choose to omit.  I’ve become a big fan of looser, less structured meal prepping lately— once a week I make a big pot of something, throw it in the fridge & eat whenever I need an easy meal. Usually, that ends up being lunch most days, & dinners are whatever works! I’ve been really inspired to stick to a grocery budget & really cook simple, cheap meals to avoid waste & save money. One of my favorite tools for keeping my wardrobe looking fresh is this new electric fabric shaver—it’s a game-changer for removing pilling and helping pieces last for years without looking dingy. I was impressed with how easily this removed lint that made some of my favorite pieces look old and worn. It’s also extremely satisfying to use!
 Other tips to extend the life of your clothes:

👕 Wash less frequently (and in cold water!) to reduce wear and tear.
🌬️ Air-dry whenever possible—it’s gentler on fabrics and saves energy.
👖 Mend small tears or loose buttons right away instead of tossing items.
☀️ Store seasonal items properly to avoid damage from moths or mildew.

Replying to @Kaitertot Turn your leftover almond pulp into something delicious 🍪✨ I’ve tried a million different recipes designed to use up leftover nut milk pulp, but this recipe, modified from The Vegan 8 blog, is my favorite one. These Almond Pulp Chocolate Chip Oat Bars are vegan, gluten-free, and the perfect way to reduce waste while satisfying your sweet tooth. They’re wholesome enough to eat for breakfast, but sweet enough for an after-dinner treat. 
 🌱 Ingredients: * 1 cup almond pulp (I’ve tried a few different nut pulps, but almond works best) * ½ cup maple syrup * ¼ cup ground flaxseed * 1 cup oats * 2 tsp cinnamon * ½ tsp sea salt * * ½ cup nut butter (I like peanut butter) * 2 tsp vanilla extract * ½ cup dark chocolate chips (melted) 
 👩‍🍳 How to make:

1️⃣ Prep your almond pulp by removing excess moisture.
2️⃣ Mix your maple syrup and flaxseed together, then let it sit to gel up for 5-10 minutes. This is your binder.
3️⃣ Combine dry ingredients in another bowl: almond pulp, oats, cinnamon, salt.
4️⃣ Mix wet ingredients: nut butter, vanilla, and the flax mixture. Add to dry ingredients and stir.
5️⃣ Press into a greased pan and bake at 350°F for 30-32 minutes. Cool completely before pouring your melted chocolate over top and sprinkling some salt on for good measure.
 I prefer to let these set in the fridge for a few hours before enjoying. Delicious, chewy, and made with love (and leftovers) 💚 Let me know if you try!

Here’s how I’ve been making my morning coffee these days–– it’s a DIY brown sugar cinnamon espresso iced latte with fresh almond milk. Why spend $$$ on an espresso machine when my thrifted @AeroPress does the trick for a fraction of the price? 💸
 This little guy might not be technically espresso, but it delivers a rich, bold shot that works perfectly in all my coffee recipes. Plus, no wasteful pods or bulky/expensive machine needed 🌍💚

For this coffee recipe, I pull a “shot” of coffee from the AeroPress (I’ve been using Subculture beans lately) with brown sugar and cinnamon, shake it up together to melt everything down and then stir in some homemade almond milk. Throw in some ice and top with more cinnamon and I promise you’ll love it.
 Pro tip: Use the “inverted method” on your AeroPress for more control, and grind your beans finer for that espresso-like taste. This thing has changed the game for me and although I still reach for my French press cold brew a lot of the time, this drink is the best treat on days when I need more of a pick me up.

Not all of us have the funds to shop small sustainable brands, as much as we may want to, but that doesn’t mean we need to resort to supporting large corporations in order to dress the way we want 🙏🏽 If you’re not interested in hitting the thrift stores (I know some people get overwhelmed with digging for gems!), online platforms like @thredUP are a great way to easily find items from brands you like but may not want to directly support. Free People is a great example— they’re a largely unethical and environmentally irresponsible company… but I won’t lie, their jeans really do it for me 🥲  Someday I’ll be able to exclusively shop from brands that align with my ethics… but for now, secondhand is what works for me & my budget. It’s not a PERFECT solution, but it dramatically reduces your environmental impact to purchase pre-loved items… in my opinion, it’s also way more fun 😉  I bought the first two items in this haul at the good old thrift store (always my favorite!) & all the rest of the pieces were found on ThredUp during their Black Friday sale last week— 1 cardigan, 2 bandanas, & 2 dresses for $100. Sure, I could shop for cheaper at Goodwill, but this was delivered right to my door & all these pieces will be very loved 💅 What’s your favorite way to shop ethically/sustainably? This is the second time I purchase food from too good to go, but first time getting it from whole foods! We were curious to know what the suprise bakery bag looked like, but did not expect all this food!! We did wish we got some bread, but its still a steal! ✨ Friday Restock time ✨
 Ending the week with a full (but chaotic) homemade kitchen reset so I can head into the weekend feeling ready. Here’s what I prepped:
 🍲 Chili:
Canned black beans, corn, fire-roasted tomatoes, sautéed onion, and Beyond Beef, cooked down with spices. Cozy and perfect for easy meals.
 🧄 Baked Garlic Tofu:
Crispy, flavorful, and ready to throw on salads all weekend.
 🍌 Smoothie Freezer Packs:
Banana, berries, flax, and chia seeds! Just add protein powder + plant milk in the morning and blitz for a rushed morning breakfast.
 🥛 Homemade Oat Milk:
So easy, so cheap, so creamy. Store-bought could never.
 ☕ Cold Brew:
Brewing overnight in the French press on the counter.
 🍪 The Big Cookie:

A couple of days after the holidays, I started feeling under the weather, which is neverrrrr gonna work for me. I am a certified baby and I hate being sick. I’m no expert, but here's the supplement/herb regimen I put in place to kick it to the curb and feel better fast. 💪✨ 
 🍯 Made a little wellness shot:     * 1 dropperful Echinacea tincture & 1 dropperful Black Elderberry tincture, both from @Herb Pharm      * 4 drops liquid @NOW Vitamin D3     * Mixed into a splash of water 🥃
 * Took my daily supplements:     * @Seed Probiotic     * @MegaFood Women’s Daily Multivitamin, Omega 3-6-9, and Iron Blood Builder
 * Enjoyed 1 @Natural Shilajit Resin shilajit honey stick per day for minerals 🍯💪 * Sipped on ginger honey tea with extra honey 🍵 + zinc throughout the day for an immune boost.
 If you feel that tinge of sickness coming on, bulk up on herbs and immunity-boosting vitamins and see if you can knock it out before it even hits! This combo had me feeling so much better in no time, and I’m pretty sure I’m gonna live forever now ¯\_(ツ)_/¯
