Overnight Blueberry French Toast Casserole 🫐 Makes 6 servings 1 loaf French bread 4 eggs 1 - 14oz vanilla Fairlife core power protein shake 1 - 5.3oz cup vanilla oikos pro yogurt 2tsp cinnamon sugar (helps the cinnamon mix in better than cinnamon alone) 5 Tbsp swerve brown sugar substitute (if using regular brown sugar, add 225 calories to entire dish, 37.5 calories per serving) 1 tsp vanilla extract 1C frozen blueberries Zest of one orange 1- cube French bread and add to 9x13 casserole dish 2- in large bowl, combine eggs, protein shake, yogurt, cinnamon sugar, 4 Tbsp brown sugar substitute, and vanilla, whisk until well combined 3- in seperate bowl combine blueberries, the remaining 1T of brown sugar, and orange zest. 4- pour custard mixture over bread, make sure all pieces are saturated. Top with blueberries, cover and store in fridge overnight. 5- Next Day: preheat oven to 375 degrees F, bake covered with foil for 30min then uncover and bake for an additional 15min.
