What are some of your biggest personal wins so far in 2025?! For me, kicking off 2025 with the Fresh Express
#FreshStartChallenge has been incredible in so many ways! Not only did I reignite a much needed push on a health and improvement journey over 3 years in the making, but Iāām feeling better after a month than I have in so long! As I look back at the month, there were some huge wins to celebrate! Iām down over 10 lbs, I have more energy across the board, and I picked back up Intermittent fasting which paired with meals like this, make getting myself to the goals i set so much easier! What helped me the most, is making one positive change for the better each week, and really sticking to that commitment with realistic goals! To make this for yourself, youāll need: - Fresh Express Asian Chopped Kit - 1lb of pork belly - Asian/Korean style seasoning rub 1. To make the pork belly, first cut the pork into strips about 3/4in to 1 in thick. Then season them up on all sides with an Asian inspired seasoning rub. 2. Place the pork belly into the Air Fryer at 375 F for 20-25 minutes, flipping halfway through. And I like to start the pork belly in a cool air fryer, this helps the fat render a bit while it heats up so it gets even crispier! 3. When the pork belly is crispy and cooked through, let it rest for 3-4 minutes. While it rests you can prepare the bowls for you salad with the salad mix, the provided topping, and the dressing.. saving a little of that to go on top of the pork as well! Great meals, and healthy choices donāt have to be complicated, expensive, or time consuming, which is why I wanted to share this recipe with you all! Iāve been such a fan of @FreshExpress for so long, and partnering up with them for this month-long challenge to kick off the year has been incredible to say the least!
