Adding this to my Ramadan rotation. recipe: chicken marinade: 2.5 lbs chicken thighs 4 cloves garlic, crushed 1 tbsp ginger paste 1/4 cup Greek yogurt 2 tbsp tomato paste Juice of a small lemon 2 tbsp 7 spice 1 tbsp paprika 1.5 tsp cumin 1 tbsp salt 1 tsp black pepper 1 tsp turmeric 1 tsp cinnamon Drizzle of olive oil —Marinate for at least 2 hours for best results! rice: 1 tbsp butter 1 tsp turmeric 1 tsp salt 1 tsp paprika 1 tsp garlic powder 1 tsp onion powder 1 tbsp tomato pasta 2 cups basmati rice, washed & drained 3 cups chicken stock —cook rice as you normally would. I let it boil then turn it down to the lowest setting (covered) for 25 min. white sauce: 1/2 cup mayo 1/2 cup Greek yogurt juice of a lemon 1.5 tsp black pepper 1.5 tsp dill 1 tsp garlic powder 1 tsp sugar Water to thin out as needed (I ended up using about 1 cup) Salt to taste —I used an immersion blender to mix, but you could also just whisk it by hand! enjoy :)
