In honor of this freezing đŸ„¶ weather we are all having I’m sharing my MISO SWEET POTATO SOUP 🍠 honestly one of my favorite soups I’ve ever made!  2 medium sweet potatoes roasted until soft  4 large diced carrots and 3 diced celery sticks sautĂ©ed until fully cooked (or roast them with the sweet potato until fork tender!)  1/2 cube of organic firm tofu  4 cups chicken broth (@gourmendfoods is low fodmap, use code MOLLY15 for a discount)  1 tsp white miso paste  4 tbsp nutritional yeast  1 tsp salt  1 tsp za’atar or sumac  1 tsp garlic infused (strained) olive oil  Optional: 3 scoops collagen for extra protein  1. Preheat the oven to 375. Dice sweet potatoes and toss in a little bit of olive oil. Roast for 35 minutes or until fork tender.  2. Add carrots and celery to a hot oiled pan and sautĂ© until all the veggies are cooked. 3. Add all the veggies to your blender with all other ingredients. Pulse then blend until smooth and creamy. Taste to make sure you love it! Add more broth or water if you want a thinner soup.  Pro tip: I love topping soups with extra protein such as seeds and crispy tofu.
