🧧Nem Chua PSA - if you’re planning to make Nem Chua at home do not buy the dragonfly brand nam powder. → Comment “recipe” for the full recipe sent straight to your DMs! 💌 I was just filming the beef version of my nem chua. The regular Lobo brand name powder I always use was sold out. I went to a few Asian markets, and I couldn’t find the nam powder except the dragonfly brand. I made 2 pounds with the Lobo packs that I already had at home and 1 pound with the dragonfly brand. It took a really long time for the dragonfly brand to start turning red and after one day of fermentation the meat was still kind of mushy. I wasn’t surprised when I opened the package and the nem chua smelled like gym sock/ wet dog even after another 2 days in the fridge. Just be aware when you’re purchasing the fermentation packs because the labeling and color theme on the packages look very similar!!! The correct pack is the Lobo brand which is pictured in the reel. Sugar * 1/2 cup whole milk * 2 tablespoons dark brown sugar * 1 teaspoon vanilla extract * 1 egg * 1 egg yolk * 3 cups flour (plus more for kneading) * 1 tsp salt * 8 tablespoons butter, at room temperature * Extra butter, melted for spreading on top of dough and on top of cooked cinnamon rolls- about 4-6 tablespoons * 1/2 cup sugar * 1/4 cup dark brown sugar * 1/2 cup finely chopped pecans * 1/4 cup raisins * 1 tablespoon ground cinnamon * 1/2 teaspoon salt * 1/8 teaspoon ground cloves * 3 tablespoons maple syrup * 5 oz cream cheese, at room temperature * 3 tablespoons butter, at room temperature * 8 oz cream cheese, room temperature * 4 tablespoons salted butter, room temperature * 3 - 4 cups powdered sugar (depending on how you like it to taste) 	•	1 tsp vanilla extract (More detailed instructions on my website) Dough: * Mix yeast, 1/2 tsp sugar, and 1/4 cup warm water. My first time having apple cake and I’m not mad about it. There’s something nostalgic about boxed cake mix, especially the classic yellow or chocolate flavor. IYKYK.
