Making hollandaise can feel challenging, but if you can fry an egg, you can whip up this sauce! W+Gā€™s senior food editor Emily Ziemski calls it ā€˜adjacent to hollandaiseā€™ minus the hassle. Ingredients: ā€¢	8 eggs ā€¢	3 oz. garlic, thinly slice ā€¢	1.5 tbl. thyme, picked ā€¢	1.25 tbl. salt, kosher diamond crystals ā€¢	4 oz. water ā€¢	8 oz. dijon, grey poupon ā€¢	2 oz. manchego cheese, grated ā€¢	6 oz. lemon juice, fresh ā€¢	Grapeseed oil ā€¢	Baby lettuce Steps: 1.	In a medium sized pan, add oil and heat the pan on medium flame 2.	Combine eggs and cook sunny side up, add garlic & thyme in the egg whites with the salt until eggs are set and the garlic is aromatic 3.	Remove from the heat and place into a blender 4.	Next, add water, dijon mustard, cheese and lemon juice and blend on high until completely smooth 5.	Once you have the base mixture blended smoothly, slowly add the oil to create an emulsion with a steady drizzle as the blender is running on medium speed 6.	If you find that the emulsion might look as if it's breaking, add a couple tablespoons of water and keep adding the oil until all the oil is absorbed by the dressing 7.
