✨RECIPE✨ This Soft Tofu Soup Ramen is one of my favorite ways to enjoy instant ramen! 🍜 The combo of silken tofu and your instant ramen of choice (I used the spicy flavored Jin ramen but Shin ramen is also good) goes perfect together with add-ins like scallions, thin sliced meat, mushrooms and an egg! 😋 So comforting and yum! Soft Tofu Soup Ramen aka Sundubu Ramyun (Serves 1) - 1 packet of your favorite instant ramen noodle soup - Sesame oil (about 1 tsp) - thin sliced meat (beef or pork) - 1/4 of a small onion diced - 1 scallion sliced (white and green parts separated) - mushrooms of your choice (I used enoki) - 1 tube silken tofu or extra soft tofu sliced - 1 egg - Splash of soy sauce - Dash of gochugaru, Korean chili powder (optional) - Dash of black pepper - Water (according to package directions but add just a splash more) - Sesame seeds for garnish (optional) Directions: Heat the sesame oil a small pot on medium heat and add the sliced meat, onions and white part of the scallion. Sauté until the meat is cooked through and the onions have softened. Next add the gochugaru, black pepper, mushrooms, water and soy sauce. Cover until it comes to a light boil. Next add the instant ramen seasonings and ramen. Cook for about 2 minutes then add the tofu and crack in the egg (you can baste the egg with the hot broth a few times to help the whites cook). Lastly top with the green part of the scallion and sesame seeds. Cover and cook for another 2 minutes. Enjoy!
