I’ve been really into lemon desserts recently… you should too 😉🍋 12 Lemonade Girl Scout cookies  3 Tablespoons butter, melted  16 ounces cream cheese, softened 2/3 cup granulated sugar 2 eggs, room temperature  1/4 cup plain Greek yogurt  1 teaspoon vanilla extract  Juice of 1/2 lemon Zest of 1 lemon  Preheat oven to 325. Use a food processor or blender to blend Lemonade cookies and melted butter together until fine crumbs form. Divide crumb mixture in a lined muffin pan and pack down tightly (I use my thumbs or the bottom of a small cup to pack down). Bake for 10 minutes. Remove from the oven and set aside to cool.  Keep the oven on and fill a baking dish with water. Place dish on the bottom rack of the oven. This will act as our water bath for the cheesecake bites, which will bake on the middle rack.  Use an electric mixer to blend cream cheese and sugar in a large bowl. Once combined, blend in eggs one at a time. Next blend in yogurt, vanilla, lemon juice, and zest. Pour filling into the cool crust mixture. Gently tap pan against the counter to release any air bubbles. Bake at 325 for 15-20 minutes or when there’s only a slight jiggle in the center of the cheesecakes mix Refrigerate for 1+ hour to finish setting before serving. #lemondessert #girlscoutcookies #lemoncheesecake #nobakedessert
