Give me some bread to dunk, and I'm sold! πŸ₯£πŸ¦ž Ingredients: 4 lobster tails, 8 tbsp unsalted butter (1 stick), 2 small onions, diced, 4 celery stalks, diced,4 medium carrots, diced, 6 garlic cloves, minced, 6 tbsp all-purpose flour, 1/2 cup tomato paste, 1 cup dry white wine, 8 cups seafood or lobster stock, 1 cup heavy cream, fresh thyme, bay leaves, sage, 1 tsp smoked paprika, 1/2 tsp cayenne pepper (optional), Salt and black pepper, to taste, Fresh parsley or chives, chopped (for garnish) Instructions: Bring a pot of salted water to a boil. Add lobster tails and cook for 5–6 minutes until shells turn red and meat is opaque. Remove lobster tails, let cool slightly, then remove meat from the shells. Chop the meat into bite-sized pieces and set aside. Reserve the shells. Melt butter in a large pot over medium heat. Add onion, celery, and carrots. SautΓ© for 5–7 minutes until softened. Add garlic and cook for 1 minute. Stir in flour and cook for 2 minutes to create a roux. Add tomato paste and cook for another minute. Pour in white wine, scraping the bottom of the pot to release browned bits. Add lobster shells, seafood stock, thyme, bay leaves, sage. Simmer for 30 minutes to infuse flavors, stirring occasionally. Remove lobster shells and discard. Use an immersion blender (or transfer to a blender in batches) to puree the soup until smooth.
