Recipe Chicken broth 2 whole Chickens @saadwholesale $1.99lb 4-5 medium Onion 4-5 Carrots 3 celery stalks 1/2 lemon 2 Bay leaves 2 tbsp Salt 1 tbsp Pepper 1/4 cup chopped parsley 8-10 cups of water 3-5 lb potatoes 1 jalapeño 2 tbsp of garlic 2 Large bunches of cilantro with partial stems chopped 1/2 cup clarified butter or 1/2 cup regular butter with 1 tablespoon of corn oil. Begin by placing 2 to 3 whole chickens in a stock pot. Allow the chickens to sear before adding vegetables and seasonings. As the chicken cooks, add your vegetables, starting with carrots and adding more as you sauté the chicken. This dish is highly customizable, so feel free to add any vegetables you prefer and adjust the herbs to suit your taste. When it comes to seasoning, such as salt, pepper, and other seasonings, adjust according to your preferences and dietary needs. This recipe can easily be made into a low-sodium stew. Cover the chicken and vegetables with water and allow everything to simmer until fully cooked. Once the chickens are cooked through, remove them from the broth along with the lemon and bay leaves. Let the chickens cool before removing the meat from the bones. Set aside the skin, chop it, and add it back into the broth for added flavor and collagen.
