EASY BURRITO BOWLS ๐ŸŒฏ perfect for meal prep and completely customizable. Been a staple for us for years! Ingredients: 1 lb extra lean ground beef (16 oz) 1 tbsp taco seasoning* (see notes) 1 tbsp tomato paste (15 g) 1/4 cup water 2 cups cooked white rice (316 g) 1 cup canned black beans (150 g) rinsed and drained 1 cup canned corn (150 g) drained 2 oz Monterey Jack cheese (56 g) grated lettuce, tomato, cilantro, limes for topping southwest sauce for topping (recipe on my site) Instructions: 1. Get your rice cooking (according to package instructions). I cook 1 cup dry rice to make 2 cups cooked. 2. Heat a large pan on medium high heat. Cook the ground beef until fully browned, breaking apart into small pieces. Remove excess liquid. Add taco seasoning, tomato paste and water. Stir until fully combined and remove from heat. 3. Distribute ingredients evenly into 4 containers. Each will have 1/2 cup rice, 1/4 of the beef, 1/4 cup corn, 1/4 cup beans, and 1/2 oz cheese. Enjoy with all your favorite toppings. 4. To store, top with lids and keep in the fridge up to 4 days. Reheat when ready, and add toppings after. Avocado Egg Salad ๐Ÿฅ‘ ๐Ÿณ๐Ÿ”ฅ This right here is easy, quick, healthy and delicious! Whether you have it as a snack, breakfast or lunch.. it will hit the spot! FULL RECIPE โฌ‡๏ธ INGREDIENTS - 1 ripe avocado - 4 hard boiled eggs  - ~1/4 cup finely diced red onion  - ~2-3 tbsp fresh chopped parsley  - ~2 tbsp Dijon mustard  - Seasonings: salt, pepper, garlic powder and  paprika. Toppings (optional)  - Everything but the bagel seasoning - Hot sauce  I used an Essential Baking Company take and bake sourdough loaf for the toast!  Note(s): Measurements are estimated. Adjust ingredients to your liking. DIRECTIONS  1. Prepare and cut up all of the necessary ingredients.  2. Great for meal prepping as well!  FULL RECIPE โฌ‡๏ธ INGREDIENTS ~1.5 lbs Yukon gold potatoes  - 1 lb lean ground beef (Used 93/7)  - Extra virgin olive oil  - Taco Seasoning of choice   Pico De Gallo (Combine all ingredients)  - 1 cup fresh diced tomatoes - 1/2 cup diced red onion  - 1 small jalapeรฑo diced - (Remove seeds unless you want it spicy) - 1/2 cup chopped cilantro  - Juice of 1/2 a lime  - Salt to taste   Guacamole (Combine all ingredients)  - 2 medium sized avocados  - 1/2 cup diced red onion  - Juice of a lime  - 1/2 cup cilantro chopped  - Garlic powder to taste  - Salt to taste  Note: The measurements are estimated. Adjust ingredients to your liking.  Addition toppings: - Shredded mexican blend cheese - Light sour cream  - Fresh chopped cilantro  DIRECTIONS  1.  Prepare the Pico and guacamole then set in fridge until ready to use. 2. Wash & dry the potatoes then dice them up into small cubes. Put them in a large bowl then add in olive oil and taco seasoning. Mix till well combined then place evenely on a lined baking sheet. Bake at 425ยฐF for ~30-35 minutes. Give a quick mix half way. 3. While the potatoes are in the oven, prep your ground beef. Add the ground beef to a greased large skillet over medium-high heat. Break it up then add in taco seasoning. Mix and add more if needed. I also like to add a bit of water or bone broth for extra moisture. Cook for 8-10 minutes mixing frequently until done.   4. Remove potatoes from oven and let cool for a few minutes.   5.
