Yaki Onigiri (Grilled Rice Balls) Ingredients: 2 cups cooked Japanese short-grain rice (warm, not hot) 2 tablespoons soy sauce 1 teaspoon mirin (optional, for added sweetness) 1 teaspoon sesame oil (optional, for extra flavor) 1 tablespoon neutral oil (for grilling) Optional toppings: sesame seeds, chopped green onions, or seaweed strips (nori) Instructions: Step 1: Prepare the Rice Start with freshly cooked, slightly warm Japanese short-grain rice for best results. Avoid using cold rice, as it’s harder to shape. Lightly wet your hands with water and sprinkle a pinch of salt on your palms to prevent sticking. Step 2: Shape the Onigiri Take about 1/3 to 1/2 cup of rice and shape it into a triangular or round ball by gently pressing the rice together. Repeat for the remaining rice. Step 3: Make the Soy Sauce Glaze In a small bowl, mix soy sauce and mirin (if using). Set aside. Step 4: Grill the Onigiri Heat a non-stick pan or grill over medium heat and add the neutral oil. Place the rice balls in the pan and cook for 2-3 minutes on each side until they develop a golden-brown crust. Be gentle when flipping to prevent breaking. Step 5: Add the Glaze Brush the soy sauce mixture onto both sides of the rice balls. Continue grilling for 1-2 minutes per side, allowing the glaze to caramelize slightly.
