I hope this doesn’t offend anyone, but chicken DOES NOT belong in pasta. There, I said it. I know that may come as a shock to many, especially those who love a good Italian American chain restaurant…. But texturally, it just does not work for me. That being said, I stepped outside of my comfort zone to try the viral Marry Me Chicken Pasta recipe to give it one more shot. Marry Me Chicken Pasta Recipe:  Chicken Pasta • 1 1/2 pounds boneless skinless chicken, cut into 1-inch pieces • 10 ounces penne pasta • 1/2 teaspoon salt • 1/4 teaspoon pepper • 1 tablespoon olive oil Sauce • 3 tablespoons butter • 2 teaspoon garlic, minced • 3 tablespoons flour • 2 cups chicken broth • 1 cup heavy cream • 1 cup parmesan cheese grated • 1 cup sun-dried tomatoes, drained • 1 teaspoon paprika • 2 teaspoons dried Italian seasoning • Fresh basil for garnish STEPS:  Chicken Pasta 1. Cook the pasta according to package instructions. Drain the pasta and set aside while you prepare the chicken and sauce. 2. Cut the chicken into 1-inch bite-sized pieces and season with salt and pepper. 3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 6-8 minutes until the chicken is no longer pink and cooked through. 4. Transfer the cooked chicken to a plate, and set it aside while you make the sauce. Sauce 1. Return to the same skillet, then add the butter. Once it is melted, sauté the garlic for 30 seconds until it's fragrant. Add in the flour and stir to make a paste. 2. Whisk in the chicken broth, heavy cream, and parmesan cheese. 3. Stir in the drained sun-dried tomatoes, paprika, and Italian seasoning. Season with more salt and pepper if needed. 4. Simmer the sauce for a few minutes for it to thicken. 5. Return the chicken to the skillet along with the cooked pasta. Stir to coat the chicken and pasta in the sauce. 6. DAY 3/30: (Recipe below) Healthier Marry Me Chicken Orzo 🍅✨ This is my all time favorite dinner for 3 reasons: its quick, it uses one pot & its soooo delicious! Optional: Make it a little healthier by using bone broth & coconut milk! •••••• Ingredients: 4 chicken thighs or 2 chicken breasts  Olive oil or oil from sun dried tomatoes 3 cloves garlic - minced 1/2 cup sun dried tomatoes in oil (drained) 2 tbsp Italian seasoning - im loving @justspices ! 1/2 tsp each, salt, pepper 1/2 tsp red chili flakes (optional) 1 cup orzo 2 cups bone broth or broth of choice 3/4 cup full fat coconut milk or heavy cream 2 handfulls fresh spinach  1/2 cup grated parmesan + more for topping! •••••• Lightly season chicken with Italian seasoning. (*you can cube the chicken before adding it to the pan, I just cut it after I seared it! Personal preference) Add oil to a preheated pot or large pan, toss in chicken. Brown chicken for a few minutes, then add in sun dried tomatoes, garlic and seasonings. Remove chicken once almost fully cooked, chop it and add it back in. (Unless you cut it up before cooking) Add orzo to pan and brown for 1 minute. Add broth, stir well, reduce heat to medium and cover for about 7-10 minutes or until orzo is al dente- stirring occasionally so the orzo doesn’t stick. If you need a little extra liquid, add 1/4 cup broth or water. Reduce heat to low and stir in coconut milk/cream, parmesan & fresh spinach. Stir occasionally until spinach is wilted.
