One Skillet Mexican Chicken and Rice Another perfect weekday meal! Marinate the chicken before you start your day, low prep and cooking, and let the oven do most of the work! Ingredients: Chicken Breast or Thighs 1/3C Oil 1t Chili Powder .5t Chipotle Chili Powder .5t Cumin .5t Paprika 1t Oregano 1t Salt 1t Pepper 1t Garlic Powder Lime 1 Shallot 4 Cloves Garlic 2C Rice 2T Tomato Paste 15oz Diced Fire Roasted Tomatoes 3.5C Chicken Broth Mix the dry seasonings and oil for the marinade. Once ready, heat an oven safe skillet and sear the chicken for 3 minutes per side. Remove add oil and cook the shallot for a few minutes. Then add the garlic, and the uncooked rice. Stir in the tomato paste. Add the tomatoes and broth. Season with S&P, stir, and bring to a simmer. Add back the chicken, cover and bake at 350 for 30 minutes. Enjoy!!
