Get the full recipe below! Ingredients: (makes 12) * 4 tbsp (57g) salted butter, room temp * 1/4 cup (50g) granulated sugar (and some extra for rolling) * 1/4 cup (50g) light brown sugar * 1 egg white * 4 tbsp (70g) unsulphered molasses * 1 1/4 cup (150g) all purpose flour * 1 & 1/4 tsp baking soda * 1 & 1/4 tsp ground ginger * 1/4 tsp ground cloves * 1/4 tsp ground allspice Icing ingredients: * 3/4 cup (84g) powdered sugar * 1-2 tbsp heavy cream Directions: * Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside. * In a medium bowl, cream together the butter and sugar until light and fluffy.
Mix in the egg white and then add the molasses and mix. * In another bowl whisk flour, baking soda, ginger, cloves, and allspice together. Add the dry ingredients into the wet, mix until combined * Add a few tbsps of sugar to a small bowl, using a small cookie scoop drop the dough into the sugar. Soft Molasses Cookies Ingredients: 2 1/4 cups all-purpose flour 2 tsp ground ginger 1 tsp cinnamon 1/2 tsp ground cloves 1/4 tsp salt 1 tsp baking soda 3/4 cup unsalted butter (softened) 1 cup brown sugar (packed) 1/4 cup molasses (blackstrap works great!) 1 large egg Granulated sugar for rolling Instructions: 1. Preheat your oven to 350°F (175°C).  2. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, salt, and baking soda. 3. In a large bowl, use a mixer to beat the butter and brown sugar until light and fluffy. Add the egg and molasses, and mix until smooth. 4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Don't overmix. 5. Scoop out dough and roll into 1-inch balls. Roll each ball in granulated sugar and place them on the prepared baking sheets about 2 inches apart. 6. Bake for 8-10 minutes, or until the edges are set but the centers look slightly underbaked. Set aside. In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter and both sugars together on high speed until creamy and combined, about 2 minutes. Add the molasses and beat until combined. Then add the egg and vanilla extract and beat until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. On low speed, slowly mix the dry ingredients into the wet ingredients until combined. The cookie dough will be slightly sticky.
