Osso Buco Recipe Ingredients: 2 beef shanks (seasoned with salt, pepper, garlic powder, onion powder, and a little adobo) 1-2 diced carrots 1/2 diced onion 1-2 diced celery stalks 1-2 tbsp tomato paste 3-4 garlic cloves Fresh thyme Italian seasoning 1/2 bottle red wine 32 oz beef broth 2 bay leaves Butter Directions: Cut 3 sears on each side of the beef shanks. This prevents it from curling up. Or tie with butchers twine. Season, sear on both sides. Remove from Dutch pot. Add veggies, onion, garlic. Sauté until softened. Add tomato paste, then red wine, let simmer a few minutes. Then add beef broth. Return beef shanks to the pot. Add aromatics like thyme, bay leaves. Cover and simmer for 2 1/2-3 hours at 375. Then lower to 350 and cook another 30 minutes. Remove beef shanks from pot without falling apart. Strain liquid through a sieve removing the veggies. Add liquid to a pot, simmer on medium low. Once reduced add a couple tablespoons of butter adding one at a time. Add liquid and beef shanks back to Dutch pot. Simmer in liquid on low heat about 5 more minutes. Taste and season more if needed. Gremolata: Chop parsley, zest one lemon, add 1-2 tbsp of olive oil. Top over beef shanks.
