Preheat your oven to 350ยฐF (180ยฐC) and grease a 10โ (25 cm) pie dish with olive oil. 2. In a large skillet over medium heat, add a little olive oil then fry the bacon and onions for 7-10 minutes before transferring to the pie dish. Leave as much fat in the skillet as possible as this will help cook the vegetables. 3. Add the Swiss chard and zucchini to the skillet while itโs still hot and cook until soft. Transfer to the pie dish taking care to leave any surplus water in the skillet. 4. In a large bowl, whisk the eggs with the coconut milk, salt, and pepper. Pour into the dish and cover the bacon/vegetable mixture. 5. Bake in the oven for 30 minutes until the egg is fully set. 6. Cool for 15 minutes before serving with hot sauce, sugar-free ketchup, nutritional yeast, or hollandaise sauce. 7.
