Recipe ⤵️ Super Easy One Pan Pollo a la Mexicana 🍗🍅🤍 Ingredientes: - 4-5 chicken thighs - 1 tbsp oil - 1/2 tsp paprika - 1 1/2 tsp salt (split) - 1/2 tsp pepper - 1 tsp adobo - 1 tsp garlic powder - 1-2 roma tomatoes (diced) - 1/2 an onion (diced) - 1-2 jalapeños (diced) - 4-5 garlic cloves (minced) - 1/2 tbsp tomato bouillon - 1/2 c basmati rice Directions: 1. Add your chicken thighs to a large pan/cast iron. 2. Season with oil, 1 tsp salt, pepper, paprika, adobo, and garlic powder. Mix well make sure to get seasoning under the skin. Turn them all skin side down. 3. Place on stove over medium heat. Cook for 5-6 mins until the skin is nice and crispy. Flip them over and cook for another 2 mins. 4. Remove from the pan. 5. Add in your onions & jalapeños. Let them cook for a few mins before adding in your tomatoes, and garlic. 6. Once everything is nice and soft, add in 1 1/2 cups basmati rice. 7. Let that fry up for a few mins before adding in slightly under 3 c of water, tomato bouillon, and 1/2 tsp salt. Try the water and adjust seasonings to taste. 8. Add your chicken thighs back in skin up. Bring to a simmer. 9. Cover & cook for 25-30 mins on low. Check around 25 to see if rice is done. 10. Top with some cilantro, and serve with some salsa & tortillas & enjoy babe!
