We’re back! When the cold weather hits, the warm, comfort food takes over! Add this smoked chicken and dumpling soup to your weekly dinner plans. You’ll need: 1 – Chicken, whole fryer (2 ½ - 4 ½ pounds). ½ C – Cock-A-Doodle Brew Beer Can Chicken Rub 2 T – Olive Oil 1 – Onion 4 – Carrots 4 Stalks – Celery 6 Cloves – Garlic 6 T – Butter 6 T – Flour ¾ C – Dry White Wine 5 C – Chicken Broth or Stock 1 C – Heavy Cream Dumplings: 2 C – Flour 2 t – Cock-A-Doodle Brew Beer Can Chicken Rub 2 t – Baking Powder 1 ¼ C – Heavy Cream Directions: 1. Preheat smoker or oven to 350 degrees. 2. Season the chicken generously with Cock-A-Doodle Brew Beer Can Chicken Rub. Place the chicken on the smoker or oven and cook for 75-90 minutes until the chicken is fully cooked. 3. Cool to room temperature. 4. Dice the vegetables and sauté them in a Dutch oven, over medium high heat with oil for 3-4 minutes until the onions become slightly translucent. 5. Add butter and melt before adding in the flour. Stir well and cook for 3 minutes, stirring constantly. 6. Add white wine and cook until the mixture is thick. 7. Add chicken stock and cream, bring to a simmer. 8. Remove the meat from the chicken and shred. Add to the soup. 9. Simmer for 15 minutes. 10. Make the dumpling dough by combining the ingredients listed and mixing until the dough forms. 11. Flatten the dough to 1 ½” thick and then cut it into 1 ½” squares. 12. Form the dumplings into balls and then drop them into the soup. 13. Cover and cook for 15-20 minutes until the dumplings are fully cooked. 14. You can serve right away. Enjoy!
