This is my wife’s favorite meal when we order Mexican 🇲🇽 Pollo Loco is the meal my wife orders more often than not from our local spot, so I figured I’d make it myself this time.  I took the easy way out with the queso and rice, but you could easily dress those up more if you’d like.  Here’s how I made it: Ingredients • 1-2 lbs. chicken filets • ½ C orange juice • 1 lime, juiced • 1 T garlic paste • ½ white onion, diced • 2 T olive oil • 1 tsp cumin • 1 tsp paprika • 1 tsp oregano, dried • ½ tsp chili powder • 1 tsp salt • ½ tsp black pepper • 2 T adobo sauce • 1 package Spanish-style rice, cooked per package instructions • 1 package queso blanco • Cilantro, to garnish   Procedure: 1. Marinate the Chicken: Mix the orange juice plus the next 11 ingredients in a bowl until well combined. Place the chicken into an airtight container and pour in the marinade, making sure the chicken is completely submerged. Marinate for at least 2 hours but up to overnight.   2. Cooking the Meal: Preheat the grill to high heat. Meanwhile, take out the chicken and pat dry with a paper towel. Once the grill has preheated, add the chicken to the grill and cook until the chicken registers 165 degrees, flipping as needed. Once this occurs, remove the chicken and shut off the grill.   3. Cook the Rice: Prepare the rice according to the package instructions. 4. Serve and Enjoy: Add the prepared rice to a plate and top with the grilled chicken and queso. Garnish with cilantro if desired and serve! .
