Giant Raspberry Birthday Cake 🎂✨ Vanilla Cake Recipe (for 1 sheet pan, double recipe for 2 shown in video) -1 cup butter (softened) -1¾ cups granulated sugar -4 large eggs (at room temperature) -1 cup whole milk (at room temperature) -1 tablespoon vanilla extract -3 cups flour -1 tablespoon baking powder -¾ teaspoon salt Mascarpone Frosting Recipe: (double frosting recipe if doubling the cake recipe above) -8oz mascarpone -1 cup powdered sugar (or more if you’d like it stiffer) -2 teaspoon vanilla extra -Preheat the oven to 350°F and line a standard size sheet pan with parchment paper
-In the bowl of a stand mixer fitted with a paddle attachment or in a medium bowl with a handheld electric mixer, beat the butter and sugar together on medium-high speed for 3 minutes, until fluffy.
-Add the eggs, one at a time and scraping down the bowl after each addition. Beat in the milk and vanilla extract.
In a medium bowl, whisk together flour, baking powder, and salt together, then fold into the butter mixture until evenly mixed.
-Spread evenly in the prepared pan and bake for 20 minutes or until a toothpick inserted in the center comes out clean. -Once cake is cooled, mix mascarpone, powdered sugar and vanilla together and spread evenly over the cake. Top with raspberries or fruit of choice!
