Fried Pork Chops with White Rice, Beans, Fried Plantains, and Avocado 😍 Ingredients: 	•	Pork chops 	•	Sofrito 	•	Adobo 	•	Sazón 	•	Garlic 	•	Dominican oregano 	•	Onion powder 	•	Paprika 	•	Vinegar 	•	Lime Instructions: For the pork chops: 	1.	Clean the pork chops with vinegar, lime, and water. 	2.	Season with sofrito, fresh garlic, adobo, sazón, onion powder, Dominican oregano, and paprika. Let them marinate for at least 30 minutes for better flavor. 	3.	Heat oil in a pan and fry the pork chops for 12 minutes, flipping every 3 minutes for even cooking. For the beans: 	1.	Heat oil in a pot and sauté sofrito, garlic, oregano, bell peppers, onions, culantro, tomato paste, and 1 chicken bouillon cube. 	2.	Add 2 cans of rinsed beans and 3.5 cups of water. Stir well, then add pumpkin and cilantro. Cover and cook on medium heat for 25 minutes. 	3.	Blend some of the cooked peppers and pumpkin until smooth, then mix the purée back into the beans for a creamy texture. 	4.	Season with adobo and a pinch of salt if needed. Let the beans rest for 5 minutes before serving. Make my moms Dominican Sancocho 🇩🇴 Ingredients  Dominican sweet peppers Peeled Garlic  Auyama (Type of Squash) Yautia (Malanga White) Yuca (Cassava Platano (Plantain) Carrot Red onion Corn Naranja Agria Bitter Orange) Cilantro Culantro (Spiny cilantro) Avocado (optional for plating Meat & seasonings  2 packs of beef short ribs  1 pack of pork spare ribs Ranchero sauce (poultry seasoned sofrito) Salt Pepper Dominican Oregano (Can use ground oregano) Half of the sweet pepper & garlic mixture Start by peeling and dicing your root vegetables and set aside. To a small pot at half a carrot, 4-5 pieces of auyama, half a red onion, & some cilantro + culantro boil & cook until softened, blend this & set aside. Season your meats by adding all the ingredients above. Brown each meat 2 - 3 minutes on each side on high heat. I would recommend browning the pork first & doing the beef second as you will be keeping the beef in to cook first for one hour. After browning the beef add about 2 liters of water I keep a tea kettle with boiling water the entire time to speed up the process. Add water and cook for 1 hour on medium/ high. Take your corn and pork add this after the hour. Cook for another hour making sure your water always stays above the meat & corn you don’t want to lose or reduce much water as you will be adding your vegetables next. After the additional hour of cooking the beef with the pork and corn you will now add the uncooked root vegetables, a chicken bouillon cube (recommend using @knorr) & the blended mixture from earlier. Take your bitter orange cut in half add the juice of half to your soup. Taste add salt if needed. At this point you are now just allowing your root vegetables to soften to your likeness for me it took 30 minutes or so. I would stand by and stir occasionally checking to see if the soup has thickened to your desired texture. If you’d like to thicken it more grab some more of the root vegetables that are now cooked through with some broth and blend. Add back to the soup and mix through to your desired texture.
